🧡 Making Shrimp Jelly

 

  • Mix yellow food coloring into the hot jelly, then pour it into the mold. Wait until the jelly sets, then remove it from the mold.

  • Prepare orange, brown, and black food coloring. Use a brush to apply the colors onto the shrimp-shaped jelly, decorating it to resemble the color of cooked shrimp.

💚 Making Lemongrass Jelly

 

  • Mix green food coloring into the hot jelly. Do not add too much — aim for a very light color. Then pour it into the mold and wait for it to set. Once set, remove the jelly from the mold.

  • Use a knife to cut the lemongrass jelly into thin slices about 0.5 cm thick to decorate the soup cup.

  • Prepare purple and yellow food coloring. Use a brush to apply the colors onto the sliced lemongrass jelly, decorating it to resemble the natural colors of real lemongrass.

🍋 Making Lime Jelly

 

  • Mix green food coloring into the hot jelly. Do not use too much; keep the color as light as possible. Then pour the jelly into the mold and wait for it to set. Once set, remove it from the mold.

  • Prepare dark green food coloring. Use a brush to apply the color onto the lime-shaped jelly, decorating it to resemble the natural color of real limes.

🍄 Making Mushroom Jelly

 

  • Mix yellow food coloring into the hot jelly. It’s very important not to add too much — aim for a very light color. Then pour the jelly into the mold and wait for it to set. Once set, remove it from the mold.

  • Prepare brown food coloring. Use a brush to apply the color onto the mushroom-shaped jelly, decorating it to resemble the natural color of real mushrooms.

🌶️ Making Dried Chili Jelly

 

  • Mix dark red food coloring into the hot jelly. You can also combine red with a small amount of brown or black to achieve a deeper shade. The color for dried chili jelly should be darker than that of fresh chili to make it look more realistic. Then pour the jelly into the mold and wait for it to set. Once set, remove it from the mold.

Decoration Steps

  • Prepare all the various jelly components in advance, ready for placing into the serving cups.

  • Pour hot jelly into the cup or container that will be used for selling or serving. Let it fully set (100%).

  • Place the decorative jellies into the cup, such as vegetable jelly, lemongrass jelly, shrimp jelly, and mushroom jelly. Arrange them nicely.

  • Mix hot jelly with orange and red food coloring to create a broth-like color resembling tom yum soup. Let it cool for 2–5 minutes, then pour it over the arranged jellies in the cup. Wait until it fully sets.

  • Finish by decorating with dried chili jelly and coriander leaf jelly on top for a realistic look. Use a bit of hot jelly as an adhesive to help them stick to the tom yum cup.
